White Dixie Butterpeas

White Dixie Butterpea is a Lima bean variety that is highly-productive and thrives in warmer climates. Plants have a bush growing habit and will reach 20″ tall. White Dixie Butterpea pods are 2-3″ long and each pod includes 3-4 rounded white beans per pod. These beans have a delicate, gourmet flavor that is unrivaled among other Lima bean varieties. When picked young, they have a succulent flavor. They’re excellent when boiled with a little ham hock or bacon fat, but also make a great addition to any hearty soup recipe. Plants will produce until the first frost date in fall. This butterpea variety is great when eaten fresh, but also preserves well. Preserve these buttery peas by pressure canning or blanching and freezing in bags.
