Growing Organic Brown Mustard Sprout Seeds
Unlike most sprouting seeds, brown mustard is mucilaginous and works best when sprouted in a terracotta sprouting saucer. However, if part of a mix and sprouted with many seeds at once, the mustard’s mucilaginous properties will be reduced and then can be sprouted traditionally in a jar, sprout tray, or hemp sprouting bag. Allow seeds to soak for a brief 4-6 hours before covering. True mucilaginous seeds generally don’t need presoaking, but mustard is only partially mucilaginous and still benefits from a light soak to expedite germination.
Steep your terra-cotta sprouter in water, allowing the entire saucer to become saturated before sowing. Add about 2 tbsp of the organic brown mustard seeds and lightly mist the seeds 2-3x per day for 5-6 days. Keep covered and away from light for the first 5 days. Be sure to rinse thoroughly to rid sprouts of natural mucus and metabolic wastes. Like other crucifers, allow sprouts 12-24 hours of light before harvesting.

Culinary Tips
Mustard seeds are jam-packed with a wasabi-like heat and that classic chlorophyll bitterness that complement each other remarkably well. They are often used in a similar way to the mustard condimen, butt they provide the flavor without all the added oils and binders! They are highly popular for mixing into salads, topping sandwiches, or sprinkling them on any dish that needs an extra kick of flavor.
